INGREDIENTS

  • 1 bag Tostitos® Scoops!® tortilla chips
  • 1 cup pumpkin purée
  • 1 can white kidney beans, drained and rinsed
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp chopped fresh thyme
  • 1/2 tsp chopped fresh rosemary
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/4 cup roasted salted pumpkin seeds

HOW TO MAKE

  1. In food processor, purée pumpkin, kidney beans, olive oil, lemon juice, garlic, thyme, rosemary, salt and pepper until smooth.
  2. Spoon 2 tsp into each Tostitos® Scoops!® tortilla chips.
  3. Sprinkle with pumpkin seeds.
